Lemon pie inratable, the most requested dessert, here you will find the easiest recipe to make it at home.
For the dough:
- 200 g of flour
- 150 g of chilled butter
- 3 tablespoons of sugar
- 1/2 tsp of salt
For the filling:
- 100 g sugar
- 35 g cornstarch
- 24 cl water
- 12 cl lemon juice
- zest of 2 lemons
- 3 egg yolks
- 1 tablespoon of butter
Preparation of the dough:
First put the sifted flour, salt, butter and sugar in your food processor.
Then mix them to have a kind of crumbs.
Then add ice water 1 tablespoon at a time while mixing until the dough comes together.
Remove the dough from the bowl of your food processor, form it into a ball, then film it and place it in the refrigerator for at least 45 minutes.
Heat your oven to 180°, butter a pie pan, place a sheet of parchment paper on top, put your dough on top.
Cover with another sheet and roll it out with your rolling pin.
Place your dough in the pan and press down on the edges of the pan, place a weight – dried beans or other – on top and bake for 12 minutes.
Then remove the weight and the sheet of paper covering the top and put back in the oven for 5 minutes…let it cool afterwards.
Preparation of the filling – lemon curd:
First mix the sugar and cornstarch in a saucepan, add water, lemon juice and zest on top, put on low heat and stir until the mixture thickens and bubbles.
Reduce the heat and simmer for a few minutes, then remove the pan from the heat.
Beat the egg yolks in a bowl, add a ladleful of your lemon mixture on top, whisk and then pour into the pan.
Return the pan to medium heat and stir for 4 minutes, add the butter and mix with the spatula then pour over the batter.
Put your pan in the oven for 10 to 12 minutes and let cool on the rack.
