Fresh, tasty and full of authentic flavor: who doesn’t love the full flavor of fresh cheese? Sure, many of us buy it at the supermarket or trusted stores, but nothing beats the intense taste and personal satisfaction of making it with our own hands at home. Today we want to show you the simple and intuitive recipe to prepare a good fresh cheese with only three ingredients: really, nothing could be easier!

The ingredients you will need are only 3:

  • 1 liter of sheep’s milk
  • 1 white yogurt without sugar
  • half an organic lemon

As for the tools to use, you will need a container, a mold and a meter of cotton gauze, like the one you can find in drugstores.

First, heat the milk for 15 minutes in a saucepan over low heat; before the milk boils, squeeze the lemon juice into the milk with a juicer; before turning off the heat and after adding the lemon juice, pour in the pot of white yogurt.

Mix everything together and let it sit for at least 3 hours. After 3 hours, take the cotton gauze and fold it over several times before putting it in a pan or container; then, strain the mixture with the gauze so that the whey goes into the pan and only the curds remain. Don’t hesitate to squeeze well so that all the whey goes into the pan.

Put the cotton gauze containing the curds in another container and put it in the refrigerator for at least 30 minutes, then remove the cotton gauze and open it up to season it with salt if you like, then put the freshly made cheese in the mold of your choice. Put the cheese in the mold in the refrigerator and voila, it’s done.
