Can you believe that this weekend is already 4th of July weekend? When did that happen?!

This summer has been a whirlwind for us, going by at demon fast speed! If you’re anything like me and constantly playing “catch up” to get ready for the next holiday event, you’re going to love this post!

Assuming you already have your best red, white and blue recipes ready, appetizers picked out and summer cocktails ready, today I compiled my favorite healthy and light 4th of July desserts. Adding fun and healthy desserts to your 4th of July recipes amidst the other treats  (like maybe some 4th of July pies!) is an easy way to help you and your guests stick to your health and wellness goals even as you join in the celebrations.

Layered Red, White and Blue Ribbon Finger Jell-O

This Jell-O recipe is… hands-down… the recipe that won me the title of the most well-liked Mom in my neighborhood. I say that “tongue-in-cheek,” of course. But kids love jello, and if they can pick it up with their hands and eat it then that’s a bonus too. To put it over the top, this is a festive and patriotic red, white, and blue recipe, meaning it’s the perfect treat for Memorial Day or 4th of July celebrations!

Jell-O is a great option for backyard barbeques and holiday parties as they are a kid-friendly dessert that looks great on the dessert table. This recipe is simple and is also adaptable for other holidays—just adjust the colors used in the Jell-O layers for a festive Christmas or Halloween dessert. No matter which colors you use, this finger Jell-O recipe is sure to be a hit this 4th of July!

INGREDIENTS

  • 1 (6-oz) box Berry Blue Jell-O
  • 1 (6-oz) box Strawberry Jell-O
  • 4 envelopes Knox unflavored gelatin
  • 1 (14-oz) can sweetened condensed milk
  • boiling water and cold water

DIRECTIONS

  1. Spray a 9×13-inch pyrex pan with nonstick spray.
  2. Make the blue layer: In a medium bowl, mix the blue Jell-O with 1 envelope of the unflavored gelatin. Add 2 cups boiling water and stir to dissolve. Cool to room temperature and pour into the prepared pan. Refrigerate for about 30 minutes, or until quite firm.
  3. Make the white layer: In another bowl, mix sweetened condensed milk with 1 cup boiling water. In a separate small bowl, sprinkle 2 envelopes of unflavored gelatin over ½ cup cold water. Let stand for a few minutes and then add ½ cup boiling water to dissolve the gelatin. Add to the milk mixture and stir to combine. Cool to room temperature. Pour the white layer over the firmed-up blue Jell-O layer. Refrigerate for at least 30 minutes, or until quite firm.
  4. Make the red layer: In a medium bowl, mix the red Jello with 1 envelope of the unflavored gelatin. Add 2 cups boiling water and stir to dissolve. Cool to room temperature and pour over the firmed-up white layer. Refrigerate for at least 30 minutes, or until firm.
  5. Slice into individual servings (small enough to hold in your hand), scoop out with a small spatula, and serve. For a more festive look, turn some of them upside-down so you have both red and blue showing on your serving platter.

COOK’S NOTE

*Be sure to let each layer come to room temperature before adding to the pan. Overly warm layers will melt the firmed-up layer, and you don’t want that to happen!
*Experiment with using different colors at other times of year (red and green for Christmas, green and yellow for St. Patrick’s Day, etc)
