1 red bell pepper
1 clove of garlic
juice of 1 lime
1 bunch of basil
2 tbsp. olive oil
1 dash of sherry vinegar
salt and pepper

Clean, remove stalks and cut tomatoes into pieces.
Peel and cut the cucumber into small cubes.
Clean, seed and cut the bell pepper into strips.
Peel and chop the onion and garlic.
Clean, blot and chop the basil.
Blend the tomatoes, cucumber, bell pepper, onion, garlic, basil, olive oil, lemon juice and sherry vinegar in a blender.
Add salt and pepper to taste.
Chill for 1 hour before serving.
Serve chilled in verrines decorated with basil leaves.
